Smileys Kitchen – Ultimate GF~ Vegan Banana Bread


~ YYYEEEEESSSSS ~Friends, it’s finally here, that scrumptious loaf of gooey, yet crispy banana bread, which always seems to be glaring at you from behind the bakery counter, and you always sulk past counter, knowing it’s “off limits” (for those of us who have been long-time gluten-free or egg free).  This banana bread is ALL YOURS (get ready to madly pig in) ~ I wanted to create a bread that no only abided by a gluten/dairy/soy free diet, but a bread low in sugar, and high in fiber, with a unique flare of ingredients, yet a delectable “guilt-free” taste, and BAM.  The goal is giving the many people out in the world, the freedom to enjoy what life has to offer, without dietary restrictions and limitations.  This comes from my background, of a girl who at the age of just 5, had so many allergies, restrictions and foods to avoid, which ultimately made life difficult~  I’ve always been a sucker for a gooey piece of banana bread, so this loaf of perfection had absolutely been on my mind for a while, yet happened by accident (happy accident, that is) It’s one of those creations I’m really proud of ~



It all started out with a few “forgotten” ingredients which had been laying in my pantry for some time.  Then, I got creative (like honestly, super creative).  The results made it obvious that this simply had to be shared with the plates of people around the world!

~SO, from my plate to yours, I give you ~ THE ULTIMATE GF~Vegan Banana Bread






 Ultimate GF~ Vegan Banana Bread

                   ~Ingredients ~


-1 cup Pamela’s Nut Flour Blend (contains a mixture of almond, walnut, pecan and coconut flour) or you can use almond or oat flour

-1/2 cup Tapioca Flour (optional) for fluffiness

-1 quarter cup to 1/2 cup Coconut Flour

-1 tsp cinnamon

-1 1/2 tsp Baking Soda & Powder (each)


-1/3 cup coconut oil

-1/3 cup Maple Syrup

-4 tbs Apple Sauce (optional)

-2 Large Ripe Bananas (mashed until nearly liquified)

-3 tbs almond milk (or a preferred nut milk!)

-1 tsp Vanilla Extract

-1/2 cup Chopped Walnuts or Almonds (depending on whether you’d like them in the bread)



  1. Preheat the oven to 350 Degrees
  2. Grease a “Loaf Tin” with coconut oil, making sure you cover the edges and corners
  3. Combine the “Dry” ingredients and sift, setting aside
  4. Combine the “Wet” ingredients, making sure the bananas are completely mashed and the nuts are chopped to desire (if you chose to add them into the bread)
  5. Slowly add the “wet” mixture to the dry, and carefully fold the batter, until completely combined
  6. Pour the batter carefully into the loaf tin, making sure it’s spread evenly
  7. Bake for 50-60 minutes depending ~ Test with a Cake Skewer periodically
  8. Once baked into a perfectly crispy golden loaf, sprinkle walnuts or almonds on top (if desired) , drizzle on some melted coconut oil or dip into almond butter
